I needed something yummy to take to a Halloween party and luckily stumbled upon Real Simple’s recipe for Pumpkin Cream Sandwiches. Pumpkin and cream…doesn’t get much better then that. They were pretty simple to whip up, which is definitely a recipe necessity now a days with a little boy at my feet. I made the cookies the night before and then, a couple hours before the party, I threw the cream ingredients in my mixer, plopped large spoonfuls between two cookies and tada! Pumpkin Cream Sandwiches.
Be cautious, though. When this recipe says it makes around 8 full sandwiches (16 cookies), it really means only 8 sandwiches. I doubled the recipe and made my cookies a tad smaller and still only got maybe 30 cookies (15 sandwiches). Nevermind that 6 of those cookies were destroyed when I forgot to realize that items closer to the fire source will cook quicker and burn burn burn. This recipe was so good, Jim ate them anyway.
Oh, and also…the recipe forgot to include 1/2 c of confectioner’s sugar in the list of ingredients! Very very necessary! And one more thing, if you’re like me and forgot to stock up on Pumpkin Pie spice, it’s super easy to make your own.
