Where do you guys stand on meringue cookies? Love them or hate them? I thought I hated them but then I made these Halloween Meringue Cookies and almost ate the whole batch (there goes that hypothesis!). These meringue cookies with chocolate mousse are easy to make and since they faintly resemble a skull, the kids absolutely adored them too. Mom for the win!

If you haven’t made meringue yet, don’t be intimidated, it’s really easy! Whether you’re going with the regular or vegan version, the beautiful high peeks of meringue just sorta comes together like magic. I’m serious. I find it absolutely amazing how a little bit of egg whites or aquafaba (bean brine) justs fluffs up perfectly. Try it, I promise you’ll be amazed too!
After the meringue has been beat to the stiff peak stage, most people usually plop it a spoonful at a time on a baking sheet. Since I’m super excited about Halloween, I thought it’d be fun to pipe out skull shapes instead (Hah, famous last words!)
While not excruciatingly difficult, these little guys ended up being a bit more of a pain than I would have liked. I’m pretty sure my first mistake was trying to pipe out the meringue from the cut corner of a piping bag, without a metal tip. It was hard enough getting the hollow eyes sockets, much less the smaller nose hole! Once I used a piping bag plus a tip, my job was so much easier!
While the meringue cookies were baking, I whipped up the chocolate mousse filling. Again, I went vegan but you could totally substitute your favorite standard recipe. Just make sure that the mousse consistency is nice and thick or it won’t stay in between the cookies and then you’ll have a ooey gooey mess. A delicious mess…but a mess nonetheless.
Now that the cookies and mousse are done, all that’s left to do is pipe or spoon the mousse onto the flat skull cookie and add the top skull to finish. I pushed the top skull down just enough to squeeze out the mousse through the eye sockets. Hint:Â Don’t press too hard or the fragile meringue will break!
I’m a total meringue convert because these Halloween Meringue Cookies were seriously so good! The gentle crunch of the meringue mixed with the smoothness of the chocolate mousse? What’s not to love?!
