Little Golden Books Shower: Mini Apple Pies

minipies01smSince we were doing a Little Golden Books theme, we thought we would do an All-American Cookout food theme. Two types of hamburgers, seasoned fries, lemonade…and apple pie ala mode! But of course, we couldn’t just do just your plain, run-of-the-mill apple pie. Noooo. Let’s make things 10 times more difficult and make individually-sized Mini Apple Pies. Shesh.

But you gotta admit…they are pretty cute, huh?

Since the process of assembly was going to take a while, we decided to cut a few corners and just buy premade pie shells. We could have cheated even more and just have bought canned pie filling but Costco was having a sale on apples. In retrospect, perhaps the canned version might have come out better since ours were a bit on the dry side. We brushed the top of the lattice with an egg wash and sprinkled a bit of sugar as well.

Pretty straight forward, just cut circles in crust large enough to fill majority of a cupcake tin and fill with pie filling. Roll out extra dough, cut 3/4 inch strips and layout on pies in lattice design. Make sure to kinda pinch the lattice to the outer pie crust so that they don’t separate while baking. Brush with egg wash and bake for about 30 minutes or until crusts are golden brown. Hope you enjoy!
