The weather is warming up nicely and soon we’ll be spending our Summer evenings lounging on the porch with friends and family! I don’t know about you guys but one thing that is essential for successful gatherings with our group is salsa and chips. And not just any old store-bought salsa! I’m talking about homemade salsa with fresh ingredients and enough jalapenos to make you sweat. Good thing I have this Crazy Easy Green Salsa recipe to throw together at a moment’s notice!
So Easy, So Fresh
I’m not kidding when I say this recipe is “crazy easy!” All you need are tomatillos, jalapenos, garlic, cilantro, and salt. Don’t know what tomatillos are? No problem, they’re readily available in Mexican grocery stores (although they’re popping up in standard grocery stores as well!), usually near the tomato section. Unless they’re pre-peeled, they have a thin, papery husk surround what looks like a green tomato. Tomatillos have a great acidic flavor that works well in salsas and sauces (Mmm, green enchiladas!) Try to pick out medium sized tomatillos that aren’t too soft to the touch but will burst with flavor when cooked!
Cook & Blend
To make this Crazy Easy Green Salsa, all you’re going to do is add a cup of water, tomatillos, jalapenos, and garlic cloves to a pot and boil for 10 minutes or until all the tomatillos are soft. Drain excess water, add cilantro, and using an imersion blender, pulverize all the ingredients. Add salt to taste and transfer to serving dish. Allow to cool before serving with tostadas or tacos to your guests!
Crazy easy, right? In fact, the hardest part has to be using the immersion blender to make the final salsa consistency. I’m pretty good with keeping most of it in the pot but it’s inevitable that some of the salsa flies onto my outfit…especially if I’m wearing white! Crazy Easy Green Salsa
- 1 cup water
- 6 to matillos
- 6 jalapenos or green chile for a milder salsa
- 3 garlic cloves
- 1 bunch of cilantro
- salt to taste
- Boil water in a large pot
- Add tomatillos, jalapenos, and garlic cloves and cook covered for 7 minutes or until tomatillos are soft.
- Drain the water, add cilantro to pot, and pulverize with an immersion blender.
- Add salt to taste. Allow to cool before serving.
