There are some vegetarians who have little to no temptation when it comes to meat…I’m definitely not one of those vegetarians! I still see pictures of BBQ dripping with sauce or a big juicy hamburger and think “Oh yum.” I’ve been a vegetarian for more than 10 years now so I realize that what I imagine the food tastes like is probably nothing like the reality but that doesn’t stop me from trying to recreate some of my favorite pre-veg foods.
When I received my package of Campbell’s Slow Cooker Sauces, all the sauces looked great (Tavern Style Pot Roast, Sweet Korean BBQ, Hawaiian Luau, Moroccan Spiced Stew, Mexican Red Chile Taco) but it was no contest the minute I saw “pot roast.” I haven’t had pot roast in freaking forever!
Naturally, the first thing I check was to make sure all the ingredients in the sauce were vegetarian (check) and that I could pronounce all of them (check check). I knew I had some vegetables left over from our CSA box and a couple boxes of seitan just waiting to be used. AND…it just so happened that I was planning on going out that night and needed an easy weeknight dinner for my husband and kids.
Campbell’s Slow Cooker Sauce to the rescue! I quickly chopped up the carrots and potatoes, tossed them in a slow cooker with the seitan, poured the sauce over everything, and cooked on low for 4 hours. I was able to create a simply amazing weeknight dinner with just 5 minutes of prep!
