I’ve got to tell you that this is actually my sister’s raw fudge recipe that everyone devours when she makes it so when I started brainstorming about this post, my thoughts immediately turned to her fudge. It’s seriously so delicious that no one even has the slightest inkling that it’s raw and sweetened with dates. Brookside Dark Chocolate Covered Almonds were the perfect final touch!
I’m not exaggerating when I say this recipe is “quick & easy!” Pretty much all you have to do is add all the ingredients to a food processor, blend together, press into a pan, and let harden in a fridge until serving to your guests. Easy, right? You can either add the covered almonds in the food processor or just press a whole one into each square of fudge. Both will work, it’s pretty much just a matter of preference. I love how elegant the single piece looks on top!
Once your fudge has had time to harden in the fridge, just cut into small cubes and serve to your guests. They’re going to love the timeless combination of chocolate and almonds! Quick & Easy Fudge
- 20 Pitted Medjool Dates
- ¼ cup Coconut Oil
- ¾ cup unsweetened cocoa powder
- 1 pinch of sea salt
- Brookside Dark Chocolate Covered Almonds Pouch
- Soak dates in warm water for 15 minutes.
- Combine drained dates and melted coconut in a food processor and blend until smooth.
- Add cocoa powder and salt and process again until a small ball forms.
- Transfer to baking dish and press down evenly with a cloth to absorb any excess coconut oil.
- Place in fridge for at least one hour to harden before serving.
