The holidays are just around the corner and with them comes the typical barrage of sweets and treats to blow all calorie-counting plans out of the water. Now don’t get me wrong. I fully plan to enjoy my fair share of delicious chocolate morsels, soft buttery cookies, and perfectly baked pies but it’s also nice to know that when my sweet tooth comes a calling, I have healthier options as well. This Healthy Caramel Dip is a breeze to make and a perfect way to fool your kids into thinking they’re getting a dessert! (which means more pecan pie for me)
I love that this recipe only calls for four ingredients and can be made in less than 10 minutes. I whip this up for after school snacks all the time and we’ve even taken to eating it on toast for breakfast. It’s seriously that good! I added cashews to my dip because I love that crunch factor but feel free to leave them out if you’re abstaining from nuts or just like your spreads to be creamier.
 My kids love pairing Apple Pops with their Healthy Caramel Dip and I’ve got to tell you, it’s pretty stinking good. There’s just something about smearing yummy caramel-goodness over a refreshingly crisp apple. Good stuff!
I hope you give this recipe a try! It’s got the great benefits of coconut oil and milk as well as no outside sugar source other than the dates. Even if you’re not focused on calorie or dietary restrictions during the holiday season, you’re sure to enjoy this delicious dip. (and you won’t feel as guilty when you eat that third slice of pecan pie!)
Healthy Caramel Dip Paleo/Vegan
Supplies:
- 2 cups Medjool Dates pitted
- 1 tablespoon coconut oil
- ½ cup coconut milk
- pinch of salt
- Cashews optional
Instructions
- Soak the Medjool Dates in hot water for 15 minutes.
- Add all the ingredients to a blender and puree on high until smooth.
- (optional) You can add some cashews and pulse blend to crush and disperse them.
- Serve with fruit skewers or whatever else you'd like to dip!
