There are very few sweets I find myself craving more often (I’m more of a french fries and ketchup kind of girl!) than I do biscochos (also called Mexican Wedding Cookies or Snowballs.) My sisters and I grew up stuffing our faces with these during special events and weddings so, for better or worse, I have a deep emotional connection with these little balls of perfection.
Unfortunately, it’s a love/hate relationship since most Biscochos are made with large amounts of lard, a substance I have refrained from eating since becoming vegetarian over 13 years ago. And even if the lard wasn’t a problem, it’s probably not a good idea for my family and I to be eating biscochos every day, right? So, what’s a girl to do? Make Healthy Biscochos, of course!
Nuts & More Nuts
These cookies are vegan, raw, gluten-free, paleo-friendly (if you make your own coconut powedered sugar.) I know that sounds kinda crazy (“What the heck are in them then?!”) but you’ve got to give them a try! If you’ve never tried your hand at raw cookies, you’re going to love how easily they come together! Essentially, all you have to do is put the ingredients into a food processor, grind, and form balls…and that’s it. Easy, right?
Little Balls of Goodness
After allowing the balls to harden in the fridge for a bit (remember that coconut oil is liquid at room temp), roll each biscocho in powdered sugar (real or substitute) and pop in your mouth. I’ll let you in on a little secret…I used real powdered sugar on my cookies (gasp!). I didn’t have any arrowroot powder on hand so I used some Wholesome Sweeteners Organic Powdered Sugar. Honestly, because everything else in this recipe is healthy, I didn’t even blink twice at eating the sugar!
Sweet Dreams

Healthy Biscochos (Mexican Wedding Cookies)
Supplies:
- 1 cup dried coconut
- 1 cup walnuts
- 3 tablespoons coconut oil melted
- 2 tablespoons maple syrup
- 2 pinches sea salt
- 1 cup pecans
- optional Powdered Sugar Substitute
Instructions
- Blend dried coconut in food processor for 1 minute.
- Add walnuts and sea salt until you have a fine meal.
- While the coconut meal is rotating, drip the coconut oil and maple syrup into the food processor.
- Turn off machine, add the pecans, and pulse a few times until evenly chopped and dispersed.
- Use your hands to form small 2" wide balls (stick mixture in fridge for 10 minutes if you can't get it to stick)
- Place biscochos in fridge for 15 minutes, remove and roll in powdered sugar substitute. (Or use real sugar...I won't tell!)
- Keep in the fridge until ready to serve
